Creamy Mushrom Stroganoff

I've seen lot's of people doing recipe blogs recently, so I decided to do my own. Tonight I made Creamy Mushroom Stroganoff for me and Tene. The recipe is supposed to feed 4, but I think you'd need a lot of rice for that!




Ingredients:
3 garlic cloves
8 spring onions
1 red pepper
1 yellow pepper
250g shittake mushrooms
125g button mushrooms
125g chestnut mushrooms
Large handful of chives
Tarragon (I used dried stuff!)
400g can chopped tomatoes
1 tsp smoked paprika
150ml stock made with chicken Bovril
Salt and Pepper
200g very low-fat natural fromage frais
Boiled rice




1) Peel and crush/chop the garlic cloves.



2) Chop the spring onions into 2.5cm pieces.



3) Deseed and cut the peppers into bite-sized pieces.




4) Chop the mushrooms (Halve the button ones and quarter the others).



5) Finely chop the chives (and tarragon is using fresh stuff).



6) Heat a large pan or pot and add the garlic, spring onions, peppers, mushrooms, herbs, tomatoes, paprika and stock.

7) Season well and bring to the boil.




8) Reduce the heat to medium, cover and cook for 20 minutes, stirring occasionally.

9) Make rice as instructed.

10) Remove the stroganoff from the heat and stir in the fromage frais.

11) Serve with the boiled rice and garnish as desired.
